On this date in 1891 Lili’uokalani (1838 – 1917), born Lydia Lili’u Loloku Walania Wewehi Kamaka’eha (commonly referred to as Lili’u), became the last monarch and only queen regnant of the Kingdom of Hawai’i. She was also known as Lydia Kamaka’eha Pākī, with the chosen royal name of Lili’uokalani, and her married name was Lydia K. Dominis. Lili’uokalani inherited the throne from her brother Kalakaua.
Hawai’i has some unfortunate culinary habits including putting SPAM on everything from sushi to pizza. But there are some saving graces such as poke (pronounced POE-keh). Its name derives from the Hawai’ian word “to slice or cut.” The name is a good indicator of what the dish is because poke is traditionally sliced raw fish (usually tuna or octopus) that is marinated in a savory, umami-rich sauce made with soy sauce, sesame oil, and green onions. Poke can be eaten as is, but it’s typically served in a poke bowl with other ingredients — like rice, vegetables, and hot sauce.
Poke recipe only has a few ingredients, and the amounts can be altered to suit your tastes.
Ahi Tuna
Because you eat it raw, be sure to buy sashimi-grade tuna. Slice it thin.

Macadamia nuts provide a little crunch to go with the soft fish.
Crushed Red Pepper (Optional)
Use the red pepper if you like a little heat.
Combine the ingredients and refrigerate for at least 2 hours. Can be served alone or with rice and vegetables plus a hot sauce.
