In many parts of Australia, the last Friday in July is arbor
day – devoted to planting and conserving trees.
When I was a boy, my primary school planted a tree every arbor day, and
one year I was chosen as the pupil to do the planting. Trees native to Australia provide a variety of foods from
seeds to fruit and nuts. Here is a
recipe for bread using flour made from the seeds of the wattle, the national
flower, and macadamia nuts.
Ingredients
290 ml boiling water
1 tsp salt
2 tsp ground wattleseed, roasted
1 ½ tbsp macadamia nut oil
500 gm bread flour
1 ½ tbsp sugar
1 ¼ tsp instant dried yeast
½ cup macadamia nuts, chopped
InstructionsPlace the wattleseed in a large mixing bowl and pour over the boiling water. Mix and let stand until it cools to room temperature. Add the remaining ingredients and mix to form a dough. Proceed as you would for any other bread – knead, prove, bake . . .
