Hawai’i Admission Day

The third Friday in August is Admission Day in Hawai’i, celebrating the approximate date in 1959 when the islands became the 50th state in the U.S.  I could give you a recipe for SPAM sushi, a local delight, but I will pass. Instead here’s a two-fer, both involving fish – without cooking. All you really need is a list of ingredients.

Lomi Lomi

Ingredients

2 cups diced smoked salmon
6 medium tomatoes, diced
1 white onion, peeled and chopped
½ cup chopped green onion
sea salt to taste

Instructions

Mix the ingredients in a large mixing bowl and chill.

‘Ahi Poke

Ingredients½ cup limu (ogo seaweed)
½ tsp salt
1 tsp soy sauce
1 tsp sesame oil
½ cup chopped onion (approximately 1/4 onion)
2 Tbsp green onion, chopped (approximately 1 small green onion)
¼  tsp ground red chile (or to taste)
1 lb raw `ahi (yellowfin tuna fish), chopped

Instructions

Same as above.
