The last Wednesday in September is Maple Leaf Day in Canada. This celebration is a kind of arbor day, but we might as well honor maples – specifically maple syrup. Mignonette sauce can be simple or complex. This one is highly complex with maple syrup as one of the main ingredients. Add a spoonful to oysters on the half shell.
Ingredients¼ cup cider vinegar
¼ cup maple syrup (not too dark)
2 shallots, peeled and minced
1 tsp fresh thyme, minced
1 tsp turmeric
1 tsp black pepper, freshly ground
zest of ¼ lemon
Instructions
In a small saucepan over low heat, simmer the vinegar, maple syrup, and shallots for 2 minutes, without reducing.
Add the fresh thyme, turmeric, and pepper and continue to simmer over low heat for 2 minutes.
Remove from heat and add the lemon zest. Let cool for at least 1 hour before serving.
Spoon over oysters.
