The second Monday in November is listed as the Heir to the Throne’s Birthday on the island nation of Tuvalu, located in the south Pacific, about midway between Hawaii and Australia. It is a member of the British commonwealth, so that Charles III is the nominal head of state. That means that prince William is the current heir but his birthday is June 21st. Don’t understand. Don’t really care. Here are banana coconut fritters from Tuvalu:
Ingredients:
Vegetable oil, for frying
2 ripe bananas, rough chopped
For the batter:
½ cup all-purpose flour
½ cup cornstarch
¼ cup unsweetened shredded coconut
2 tbsp sugar
½ tsp baking powder
salt
1 egg
½ cup coconut milk, or as needed
Garnish
confectioners’ sugar
Instructions
The recipe I found says: “In preparation for making this recipe, I highly suggest you dance with royalty.”
Fill a large pot, wok, or high sided skillet halfway with vegetable oil. Heat to 375º F/190º C
Meanwhile, whisk together the batter ingredients.
Add the chopped bananas and mash together with a potato masher or similar.
When the oil reaches 375º F/190º C, scoop some of the batter into the hot oil. Be careful not to splash and do not crowd too tightly. Fry in batches. You can use an ice cream scoop if you have one. Put it down in the oil briefly while releasing the batter.
Fry until deep golden brown, turning as needed.
Drain on wire racks and dust with powdered sugar.
