Islander Day (Prince Edward Island)

The 3rd Monday in February is celebrated in different provinces in Canada under different names. The provincial government of Prince Edward Island introduced Islander Day (Fête des Insulaires) in 2009, originally on the 2nd Monday in February, but then moved to the 3rd Monday to align with celebrations in other provinces.

Prince Edward Island is famous for it potatoes, so this local recipe for sweet and sticky potatoes fits the bill.

Ingredients

2 kgs (5 lbs) small/baby round potatoes
sea salt
½ cup butter, cubed
6 cloves garlic, peeled and chopped
3 sprigs rosemary, leaves stripped
1 cup brown sugar
⅓ cup heavy cream
½ cup dry vermouth or white wine
2 tsp freshly cracked black pepper
arugula for garnish

Instructions

In a large saucepan, cover the potatoes with 2 inches of water and add salt if desired. Bring to a boil.

Boil the potatoes until tender. Drain and cut in half.

Melt butter in a deep skillet and gently warm the rosemary and garlic in the butter until fragrant.

Add the brown sugar, black pepper and heavy cream and whisk constantly over medium heat until the sugar is dissolved.

Add the vermouth and cook the mixture for two minutes to allow the alcohol to cook off.

Bring to a boil and allow to boil for 3 minutes and toss in the potatoes. Coat the potatoes with the mixture over low heat. Serve over a bed of arugula.
