Sumardagurinn fyrsti

The Thursday after the 18th of April is marked as the first day of summer in Iceland (sumardagurinn fyrsti) and is a public holiday celebrated with parades and festive events. By most people‘s standards, the “summer” months in Iceland can be cold and icy, but the issue is the length of the days, not the weather. In the old Icelandic calendar there were 6 months of short days (winter) and six months of long days (summer). 

The national dish of Iceland is fermented shark which you probably cannot find in the local supermarket, and you may not like its taste anyway.  There are also a number of dishes featuring lamb or cod.  All good. Lummur is a pancake made with oatmeal that can eaten with savory items, such as smoked fish, or with fruit and jam.

Ingredients

½ cup flour
1 tbsp sugar
1 tsp baking powder
½ tsp cardamom
1 pinch salt
1 ½ cups cooked oatmeal (room temperature)
1 egg, beaten
½ cup milk, plus more if needed

Instructions

Mix the dry ingredients together in a bowl.

Add in the cooked oatmeal, egg, and ½ cup of milk. The consistency will depend on how much liquid is in the oatmeal. If the batter is too thick, add more milk.  Whisk until combined.

Cook the pancakes on a hot buttered griddle or heavy skillet for 2 to 3 minutes each side.

Serve hot.
